I LOVE LEMONS!!

Lemons make me HaPpY! Their zippy yellow color cheers me almost as much as a bouquet of fresh flowers. The zesty aroma of lemons instantly perks me up and gives me a moment of blissful pause as I close my eyes and inhale their scent. The vivacious, tangy taste of lemons can be a subtle surprise or a refreshing relief.

THIS is what I SEE when I look at lemons! I actually imagine an adorable little Lemon Imp, inside each lemon smiling at me. If I'm having a blue day, I imagine this little imp is daring me to 'snap outta the blues' and turn my frown upside down!

I have often said that if I was stranded on a desert island and could have only one food it would be Lemon Curd. It's tangy sweetness transports me to another place. It is rich and buttery which is completely satisfying. And in addition to being packed with vitamin A , vitamin C and potassium, lemon curd is loaded with protein.
It's nearly a complete food!!

LEMON CURD
Lemon curd is not a custard. It's more like a rich fruit spread. In late 19th century England, it was served alongside scones during tea time. Today it can be used on toast, in tarts, served with cakes, cookies and even pancakes. Homemade Lemon curd is SO MUCH richer than store bought and it's easy to make.

Corey's Lemon Curd Recipe

1/2 c. fresh lemon juice (2-3 large lemons)
1/2 c. butter
5 large eggs
3/4 c. sugar

Combine lemon juice, half of sugar and butter in saucepan. Heat to boiling, whisking occasionally. Meanwhile, beat eggs with remaining sugar, in stainless steel bowl, until thick and creamy. "Temper" the hot lemon liquid into the egg mixture by adding a small amount (~1/4 c) and stirring to incorporate. Repeat 2-3 times. Then add entire hot liquid and stir to combine. Return entire mixture to saucepan. Continue cook, whisking, until mixture boils and thickens to a pudding-like texture. Strain lemon curd through a strainer into clean stainless steel or glass bowl. This removes any lumpy egg particles. Cool in refrigerator.
Makes 1-1/2-2 cups of curd

LEMONADE
There's nothing like a tall glass of homemade lemonade on a hot summer's day to cool you off. Homemade lemonade is super easy. When combined with white wine it takes the WHINE out of dog days of summer!

Corey's Homemade Lemonade + Lemony White Wine Spritzers

2-1/2 c. water
1-1/4 c. sugar
1/2 tsp lemon zest
1-1/2 c. lemon juice (5-6 large lemons)
Cold water
Ice
Sliced Lemon or other fruit for garnish

For lemonade "concentrate":
In medium saucepan combine water and sugar over medium heat. Stir until sugar dissolves. Remove from heat and stir in lemon juice and zest. Let cool.

Lemonade Drink: combine equal parts lemonade concentrate and cold water. Add ice and garnish as desired

Lemony White Wine Spritzer: combine equal parts lemonade concentrate with chilled white wine. Add ice and garnish as desired.

I pretty much love all things Italian. In cooking school, this was by far my favorite dessert! It combines three of my favorite culinary delights: lemons, strawberries and .....
Prosecco!


Strawberry Sgroppino

Lemon gelato (or sorbetto for dairy free option)
1 pint ripe, RED strawberries, cut in bite sized pieces
Sugar, to taste
Prosecco (or sparkling cider)
Wine or Champagne glasses
Sliced lemons, strawberries or mint, for garnish

Combine cut strawberries and sugar in a
bowl. Scoop 1-2 small scoops of gelato or sorbetto into each glass. Top with 1-3 tablespoons strawberries. SLOWLY pour Prosecco over the top. Garnish with lemon slices, strawberries or mint sprigs.

WHY I had to write

As we transition from winter to spring I have decided to listen to and act upon a stirring within my spirit to write. This desire has been swirling inside for years, but I've allowed many distractions to hold me back....until now!
For a long time I have struggled with WHAT to write. A self help book? A Novel? Freelance articles? WHO is my audience? WHAT does my writing voice read like or have to say? And truly WHO cares what I have to say anyway?

On my recent vacation, as the desire to record my thoughts and inspiration blossomed within, I realized

I NEED TO WRITE FOR ME!

I need to write for my own creative process of manifesting and flow.
The flow of distilling SO MANY ideas into clarity and concentration. The laid back environment of a blog became the clearest answer as to what form my writing should take. But what does my soul long to impart?

MAGIC!!

What this blog is about...

The awareness of life's magical moments and how they shift us from a monotonous, beige existence to an awakened, color filled moment of joy, gratitude, vitality.

Life a full palate of color! A year is a full cycle of seasons!

From black, grey, white, brown to bright orange, vivid blue, soothing green and radiant red. Our experience of life on a day to day basis includes: good, bad, happy, sad.

Sometimes we get stuck in the grey, sadness - but even the monochromatic hues of winter are peaceful and calming to our often weary souls. And just when we've had ENOUGH of cold, dark, snowy winter.....SPRING ARRIVES!

We feel the warmth of the sun on an early March day. We see buds on the trees and leaves of green sprouting up from the earth.

the magic of spring!

Every year it seems like just when we can't take another week of clouds, cold, wind and snow.....spring jumps out an surprises us with her freshness, her color, her hope!

Yellow daffodils, purple crocus, golden forsythia bloom. In the radiance of these blossoms we hear a bird's song and our ordinary, beige existence becomes vibrantly alive again!

THAT IS A MAGICAL MOMENT!

looking ahead...

THIS (and SO MUCH MORE) is what my spirit longs to record for myself, for YOU and for others.

I have no idea how often I will write. I just know it will be varied and looking to those Magical Moments.

I need to write.....to express inner thoughts.....to tell people's story, the story extraordinary stories of ordinary lives!....naturally I'll write about food/cooking, yoga, travel.
